Because I'm hoping to address a more international audience (and my Danish is lousy), I'm doing an English post.
We discovered new episodes of one of my favorite series on Netflix, Rita. She and her pal Hjördis are primary school teachers in a small Danish village and it's so delightful.
And my cousin @jjdeboer was actually making holiday in Denmark, posting pics of those endless flights of stairs that lead to the most beautiful, scintillating shores with hues of pink, green and grey. No doubt they are now in the know of how delightful it is to walk around the cosy little streets of some fisherman's village such as Hornbaek, speckled with shops and bakeries. All of this combined made my longing for Denmark go through the roof. So, I decided to make Smørrebrød. You can find Smørrebrød anywhere in Denmark and it's basically a bunch of really terrific rye bread sandwiches, topped with meats, fish, beet, potato, eggs.. Anything savoury and delicious. We would usually go to a bakery, pick up some Smørrebrød and coffee and head over to the woods or beach for a picknick.
This was my take: sock-eye salmon and horseradish & aioli-cream with Dill, herring and onion-pickle, ham and piccalilly with carrots and cress, shrimp with Dijonaise and eggs and blue cheese with pear, pecans and plum jam...
My request: Maybe you've been in Denmark as well, maybe you live there (wanna swap? DM me:)), maybe you just love Smørrebrød as much as I do and you have some great combo's up your sleeve, please let us know in the comments!!
